Preheat oven to 350,
Butter a baking dish.
Arrange pitted and sliced fruit or berries so that the bottom of the dish is covered,
I used 5 smallish peaches that were starting to get too ripe, you could also use cherries, pears, black berries or plums. They are all divine.
In a blender, food processor or mixer bowl combine:
1 1/4 c (whole) milk,
3 eggs,
1/2 c flour,
1/4 c sugar,
pinch of salt,
dash of vanilla.
Blend thoroughly.
Pour batter over the fruit, put it in the oven and bake at 350 until its golden and puffy- 45 minutes to an hour depending on the pan and how juicy the fruit is.
Let it cool a few minutes before you dive in.


Mmm. I love clafoutis. I’ve only made it with sour cherries. Peach sounds great. I keep buying peaches from the farmers’ market meaning to bake with them, but then I eat them all!
