Toad in a hole for Mister Valentine:
Whisk together: 2 eggs, 3/4 c whole milk, 3/4 c water, 1 c + 3 tbs all purpose flour, salt, pepper. Set aside.
Preheat oven to 425 F, add 1-2 tbs oil to a cast iron skillet and pop it into the oven.
Slice 4 (Irish Bangers) sausages in half lengthwise and arrange them over the bottom of the hot skillet. Then pop them back into the oven for 10-15 min.
(The Bangers are pre-cooked, if you’re not using a precooked sausage, you will want to cook them longer, with out slicing, and on the stove top. Then put the pan into the hot oven for about 5 min.)
Pour the batter into the hot pan over the sausages and bake for 30 min. Until the whole thing is all puffed up and the top has a nice gold crust.
Serve with apple chutney or:
Chop 2 apples, 1 onion and put them into a small sauce pan with a lid. Add a big splash of vinegar, an about equal splash of water, 1-2 tbs brown sugar, a pinch each of dry mustard, ginger powder, nutmeg, salt, pepper, 1 cinnamon stick, 3 allspice berries, 5 cloves. Cover and bring to a boil then reduce heat to low and simmer until the Toad in a Hole is ready.
